The restaurant exists because the owner Rich couldn’t source meat of this calibre elsewhere: he imports the meat from Uruguay, a mix of grain and grass-fed cattle, and they are cut by hand in a central butchery before being delivered same day to Roxie restaurants in Putney, Wimbledon and Earlsfield. They are then aged for a minimum of 21 days.
The kitchen’s execution matches the quality of the raw materials – each steak arrives precisely cooked, properly rested, and seasoned.
